My own version of buffalo sauce!
Buffalo Sauce
Yield: Ounces
Prep Time: 5 minutes
Cook Time: 10 minutes
This sauce is quick to make, low-carb, Keto friendly, and absolutely delicious!
Ingredients
- 1 cup hot sauce
- 1 cup unsalted butter (2 sticks)
- 1 tsp garlic powder (optional)
- 1 tsp mustard powder (optional)
- 1 tsp red pepper (optional)
- 2 pinches kosher salt (optional, omit if using salted butter)
- black pepper to taste (optional)
Instructions
- Combine ingredients with hot sauce in small sauce pan. Mix to combine.
- Set hot sauce over very low heat.
- Cut butter into small knobs.
- Once the hot sauce begins to have whisps of steam, remove from heat.
- Add a knob of butter and whisk until mostly melted. Then add the next knob of butter.
- Whisk all the butter into the sauce.
Notes
If you wish to make the sauce a little thicker, especially for a dipping sauce,
add 1/8th tsp of xanthan gum by sprinkling it over the hot sauce while whisking.

I wonder if sodium citrate would be useful in preventing or correcting the sauce from separating. Sodium citrate is sometimes used in cheese sauces to keep them from “breaking” which is what made me think it might be effective here.
Might be worthwhile if youre making a big big batch!
