Rumchata is delicious and this Keto Rumchata recipe does NOT disappoint. However, to understand the rumchata, we have to take a few steps back and find out why it’s so delicious.
Rumchata is basically an alcoholic version of horchata. Both of Spanish and Mexican origins – I’m rather familiar with the Mexican version after eating bag fulls of tacos from the local taco trucks. To wash those tacos down, there was nothing better than a cold beer – or in the best case, an ice cold liter of horchata. Having had my fair share of the amazingly delicious drink in my younger days, I can attest that it is absolutely amazing.
Horchata is made from rice water and condensed milk or some sugar variant. It by no means is low-carb or Keto friendly, which is incredibly disheartening. There are a few keto horchata recipes out in the wild, but the ones that I’ve found require an intense amount of work for a glass full of the stuff – not really something that I’m into. Call my generation instant-gratification seeking, but spending hours for an 8 oz drink is not worth it to me unless it’s laced with diamons.
Somewhere along the line an alcohol called Rumchata was made in the US (as I understand it – correct me if I’m wrong). It was basically horchata meets the mass US market, but with enough alcohol to get you feeling loose. It was supposed to rival Irish Creme – and it’s done very well in that regard. It’s an absolute substitute, but with enough of a unique flavor that it stands on it’s own.
Enter the Keto Rumchata, the rival to the carb coma inducing rumchata. This recipe is dead simple to make, all with ingredients you already have. That’s the beauty of it – there’s nothing crazy in this rumchata recipe. And when I say it’s delicious, I mean it. My friends who couldn’t care less for dairy laced cocktails have asked for this cocktail on multiple occasions; the smile on their face reflects their joy when I refill their cup at parties with it. They ask for it, EVEN if they are lactose intolerant – it’s that good.
Just like it’s big brother from another mother (the carb mother) this cocktail can also substitute or stand on it’s own. I’ve consumed it neat, on the rocks, in other cocktails, or with coffee. Yes, coffee. That’s actually my favorite variant – shaken over ice with a generous helping of cold coffee over top.

Keto Rumchata
The Keto Rumchata is a low carb take on the Rumchata, which a rum drink with the wonderful flavors of Horchata. This Keto Rumchata is refreshing, dead simple, and absolutely delicious. Even though it has dairy, it makes for an amazing warm weather cocktail that everyone will ask for!
Ingredients
- 2 oz (59ml) Unsweetened Almond Milk
- 2 oz (59ml) white rum
- 1.5 oz (44ml) Keto Simple Syrup
- 1 tsp (7ml) heavy cream
- ¼ tsp ground cinnamon
- ¼ tsp vanilla extract
- pinch of salt
- dash of ground nutmeg (optional)
Instructions
- In a shaker glass add the almond milk, simple syrup, heavy cream, cinnamon, vanilla extract, nutmeg, salt, and rum.
- Add ice and shake for ten seconds
- Strain into a highball glass over ice.
- Enjoy!
Notes
- This cocktail can be consumed neat, over ice, in other cocktails, or even in coffee!
- I like to drink them over ice with an additional 2-3 ounces of cold coffee - it's absolutely delicious

It will keep in the fridge for a while – but I wouldn’t be too worried about it sticking around for long!
