Ingredients:

1 Red Bell Pepper, diced
1 Onion, medium, diced
2 Carrots, medium, diced
4 ounces Bacon
1 lb Ground beef (90% lean)
1 cup Water
1 cup Beef stock
28 oz Crushed Tomatoes (1 can)
15.5 oz Black beans (1 can)
15.5 oz Pinto beans (1 can)
15.5 oz Red kidney beans (1 can)
1 Chipotle chili in Adobo sauce
2 tbsp Olive Oil
2 tsp Cumin
1 tsp Mustard
2 tsp Chili powder
1/2 tsp Oregano
Salt
Black pepper

Prep Time: 15 mins
Cook time: 1 hr
Garnish with sour cream, shredded cheese, scallions, onions, red bell peppers, and chives
