French toast is one of those classic breakfast items that’s fantastic with day old, stale bread. But what happens when you don’t eat bread? Well… we have to make some fresh bread that mimics the day old bread! this low-carb and keto friendly French Toast is quick to make and absolutely delicious!

Microwave Bread

French Toast Soak (Custard)

Instructions

Make the Bread

  1. Melt the butter in the microwave.
  2. Add the sour cream into the butter and mix well until evenly combined.
  3. Add the two eggs into the butter/sour cream mixture and mix until evenly combined.
  4. In a microwave safe dish, add the almond flour. baking powder, sweetener, and salt. Mix to combine.
  5. Add the wet ingredients into the dry ingredients and mix well.
  6. Place the 'dough' mixture into the microwave for 2 minutes. The time may depend on the power level of your microwave.
  7. Remove from the microwave and let cool for 5 minutes.
  8. Since the container and the bread will still be very hot, cautiously remove the bread by giving the container a light tap - set the bread and the container to cool. CAUTION: do not add water to the container, especially if it is glass - it will shatter due to the rapid temperature change.

Make the French Toast

  1. Crack the three eggs into a bowl.
  2. Add the brown swerve, cinnamon, salt, vanilla extract, and mix until well combined.
  3. Add the heavy cream and the almond milk and mix again until well combined.
  4. Slice the 'bread' into roughly 1 inch thick or 2.5cm thick slices.
  5. Using a flat bottomed pan, add the custard mix and then place your bread slices to soak, flipping so they soak from both sides.
  6. In a cast iron or non-stick pan, get it to medium low heat and add a generous amount of butter.
  7. Place your french toast onto the pan and make sure it can slide around easily. If not, your heat is either too hot, too cool, or you don't have enough butter. Don't feel bad - getting it right is just like pancakes: the first one is always burnt.
  8. Once the bottom cooks through to a nice color, flip the toast and let it continue cooking.
  9. Rinse pan and repeat for all the slices (you can do 2-3 at a time once the temperature of the pan is dialed in).
  10. Top with low-carb maple syrup, whipped cream, nuts, berries, butter, etc.
  11. Enjoy!
